Easy Lemon Chicken
This baked lemon chicken π π is super easy to make and requires little time to prepare. Itβs great to slice on salads or to serve with mixed veggies.
Ingredients:
- 3 chicken breast or 4-5 chicken thighs 
- 4 lemons (more if chicken pieces are larger) 
- Olive Oil 
- salt and pepper 
Method:
- Place chicken in a baking pan. 
- Make a marinade of lemon juice from 2 lemons, enough olive oil to coat the chicken, 1/2-1 tsp salt and pepper to taste. 
- Thinly slice the remaining two lemons and place on top of the chicken. 
- Marinade in fridge for at least an hour. 
- Bake at 350F until cooked through. 
- Enjoy! I like to serve over a bed of arugula or spinach or with a mix of quinoa, zucchini, tomato, and peppers.
